Zucchini Bread


I got this recipe from Heather yesterday and it was delicious! A great way to use zucchini!

3 eggs
1 cup vegetable oil
2 cups sugar
2 cups grated zucchini
2 tsp. vanilla
3 cups flour
3 tsp. ground cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt

Beat eggs until frothy; Mix in vegetable oil and sugar. Stir together grated zucchini and vanilla and add to mixture. Sift together flour, cinnamon, baking soda, baking powder, and salt. Add to mixture. Pour into 2 greased and floured loaf pans.
Bake at 325 degrees for 60-70 minutes. Enjoy!

I love zucchini bread..but what you can do to make it even more tasty is sprinkle cinnamon and sugar in the bottom of your pan...and when it comes out you have a crust that is like heaven....yes heaven!
